Saladero goes VEGAN! Let us inspire you...

We are a vegan lodge and offer delicious plant based food. Our menus are full with healthy nutritions and balanced food. Meals are prepared from scratch and served family style. Whenever available, fresh juices, herbs, root vegetables, and fruits are harvested from our gardens at Saladero. These include coconut, bananas, plantains, pineapples, papaya, guananaba, culantro, ginger, tumeric, yucca, araza, lemongrass, oranges, lemons and limes. Our set menu varies from a mixture of local Costa Rican to a fusion of international favorites.



  • Costa Rican coffee (or black tea)

  • Gallo Pinto: Costa Rican specialty rice and beans with spices, onions and garlic

  • Pancakes: Banana and walnut pancakes with homemade unrefined syrup

  • Omelets: Fillings may include zucchini, green/red pepper or onions

  • Fruits: banana, pineapple, mango and papaya

  • Quesadillas: Two flour tortillas, toasted with refried beans, rice served with sour cream, tomato salsa and guacamole

  • Empanadas: Homemade corn tortillas wrapped around a vegetables mix served with a mild chilero sauce and green salad

  • Chalupas: Fried tortillas with fried beans, lettuce, tomato salsa and guacamole

  • Exotic Green Papaya Salad: Served with shredded papaya, hearts of palm and homemade cilantro or papaya seed salad dressing

  • Saladero Garden Leaf Salad: Moringa, Katuk and Red Hibiscus leaves combined with shredded cabbage and sliced onion, topped with sliced almonds and served with our homemade pineapple vinaigrette salad dressing

Afternoon Snack


Fresh homemade mango, tomato or guacamole salsas served with tortilla chips or fried plantain chips


  • Pasta: Served with vegetables and a vegan tomato sauce, fresh homemade bread and salad

  • Pizza: Our wood fired pizza oven makes the very best pizzas in the Golfo Dulce (almost anywhere). Choose your own toppings and watch them being made!

  • Indian curry: Served with potatoes, cauliflower and rice

  • Patties: Veggie patties with mango salsa, fresh homemade bread and salad

  • Green Salad: Lettuce with tomatoes, onion, cucumber, mixed leaves from our gardens

  • Green Papaya Salad: Shredded green papaya, shredded carrot, cilantro, crushed roasted peanuts, lime juice, garlic andserved on a bed of lettuce

  • Sustainable Salad: Made with leaves from our gardens including red hibiscus, moringa (tree of life) and katuk, mixed with hearts of palm, onion and various other greens, seeds or nuts
