Saladero goes vegetarian/ vegan! Let us feed and inspire you.

We are a vegetarian/ vegan lodge and offer delicious vegetarian and plant-based food. Our meals are fresh, healthy, balanced and full of flavor. Dishes are prepared from scratch and whenever available herbs, roots, vegetables and fruits are harvested from our gardens at Saladero. These include coconuts, bananas, pineapples, papaya, guanabana, moringa, coriander, ginger, curcuma, lemongrass, limes, all organic and rich in nutrients.


We create a fusion cuisine in our open kitchen. Tico inspired dishes melt with international favorites and specialties. On our plates you will find Gallo Pinto, Empanadas, Curries, Pasta, Chalupas, Coconut Rice, Yucca Fries, Plantain Chips, Gazpacho, Bowls and Salads, and sometimes we fire up the pizza oven. Our food is abundant, and so are the fresh juices and smoothies. Some are green, some are sweet, many are with cocoa, and all taste like vacation. 


Oh, and rarely a day goes by without a fresh pipa. That’s a young coconut. That’s what you sip on while sitting on the veranda while watching the dolphins swim by. That’s pura vida.
